Non-profit coffee shop.

I have always wanted to open a coffee shop for decades. Since I was in my early 20's. But my career and profession brought me to a different position in life.
Now, as time gets closer. I am thinking about opening a non-profit cafe where I hire those who want to get off the streets and need a little helping hand in doing so. Starting work experience, learning responsibility, regaining self esteem etc.
I am in the planning stage at the moment.
I would like it to be quite small. Take out only. With a limited amount of coffee drink varieties served. Mainly brewed and something a super automatic can create. It needs to be as simple as possible where as little training is required to serve a great product.
I would welcome suggestions of equipment before contacting a vendor so I would know very close to what I need.
Thank you for any suggestions.
